- 2 lbs lean ground chicken
- 2 cups white rice COOKED
- 3 steamed carrots (chopped)
- 2 whole eggs (including shells)
- 1 tbsp. ground flax seed
- 1/4 cup canned pumpkin
- 1/3 cup low sodium chicken broth
In a medium-sized skillet, brown the chicken. Do not use any additional oil to prevent it from sticking. The natural fat in the chicken will prevent this. Once cooked, drain the fat and set it aside for use in another dish or discard it.
